Orange Jello Salad

I am originally from Utah.  I have heard that Utahans eat more than their share of Jello and Jello salads.  I don't believe I ate much Jello growing up, and I don't eat it often now.

I do remember my mom making a Jello salad like this a few times of picnics, but it wasn't a regular occurrence.  Before making this salad, I don't believe I had eaten a Jello salad or Jello in over a decade.  

Orange Chocolate Pancakes

I'm back on my pancake kick.  For a while, I posted a few overnight oatmeal recipes.  I posted raspberry and almond overnight oatmeal, banana overnight oatmeal, apple pie overnight oatmeal, and overnight carrot cake oats.  I still eat overnight oatmeal most days, but I haven't felt the oatmeal deserves a post.

I have also made many types of muffins.  I have chocolate and peanut butter swirl muffins;  pecan pie muffins; chocolate zucchini muffins; banana, coconut, and mango muffins with chocolate chips; carrot banana muffins; peanut butter and blueberry muffins; gingerbread muffins with oatmeal cookie streusel and chocolate chips; German chocolate muffins; and lime and coconut muffins.
