Moroccan Beef Stew


It snowed today.  It is supposed to get up to the 50s tomorrow so it probably will not last long.  Many people worked from home because of the snow.  I went into work, and it was so quiet.  I had the place to myself.


In other exciting news, I saw the musical Wicked last weekend for the first time in my life.  I remember that a little over ten years ago it was so popular.

Slow Cooker Chicken Marrakesh


I'm leaving to go to Mexico in a couple of days.  I'm pretty excited.  I have been to Mexico a couple of other times, but it has been over ten years.


I will be meeting my parents and nephew there, and my brother and his family is there already.  They have been there for a couple of months.

Lamb Tagine


This isn't the first time I made this recipe.  I made lamb tagine last June.  I used the same recipe as well.  The difference is that I used saffron this time.  I bought a small package of saffron in Spain.  


 This was a great recipe, which is why I made it twice.  I'm not sure how saffron affected the overall flavor.  I can't remember exactly how it tasted last time.  Last time I added dried apricots.  That was a tasty addition, and I probably should have added dried apricots this time as well.

Lamb Tagine


Lamb is probably by favorite type of meat.  I don't cook with it regularly though.  I think it is because lamb is so expensive.  I grew up eating lamb, and I didn't realize how good I had it.


I have three other lamb dishes on this blog.  I had made lamb rogan josh, rice with fave beans - timmen baghilla, and a lamb stew.

Atkilt - Ethiopian Vegetable Bowl


I tried Ethiopian food for the first time when I moved to the DC area several years ago.  There were no Ethiopian restaurants where I grew up.  I have eaten Ethiopian food several times since then, and it has always been delicious.



Whenever I have eaten Ethiopian food, I have eaten it communally  from the same dish.  Various meat and vegetables were arranged in piles on the same dish.   We were also served flat and airy bread.

Moroccan Shrimp


This dish may not look like much, but looks can be deceiving.  It made a scrumptious, though rather plain, meal.


I'm not sure if it is authentic Moroccan cuisine or not.  Moroccan cuisine has been influenced by Mediterranean, Arabic, Andalusian, and Berber flavors.  I'm not sure who the Berbers are, but they are from North Africa.

Couscous with Golden Raisins, Pine Nuts, and Green Onions


Today was my first day of a new job.  It was a bit overwhelming because I was given an abundance of information.  It's going to be a challenge, but I'm excited for the opportunity to learn and grow professionally.  


My commute is shorter, and I ended up arriving over twenty minutes early.  I'm going to need a few days to get accustomed to my new route and plan my mornings.

Marrakesh Vegetable Curry


Happy Easter!  I have wanted to go to Spain for many years.  I think the desire started in a college Spanish class.  In class we read a short Spanish novel, and I think it was called La Peregrina.  I googled this title but didn't find a match, so I may be remembering incorrectly.


The story was set in Spain, and I believe the pilgrim was walking el Camino de Santiago.  This is a path in Spain that leads to a shrine in Galicia for the Apostle James.
