Crustless Spinach Quiche

I don't make enough egg dishes.  Eggs are so versatile.  They are tasty and healthy too.  They are also pretty cheap for a protein.

I made this dish a couple of weeks ago for a brunch.  I used my pie pan, which I seldom use.  I think that needs to change as well.  Especially since my parents gave me a pie cookbook for my birthday several months ago, and I still haven't used it.

Pumpkin Mac and Cheese with Artichoke, Spinach, and Caramelized Onions

I have had another busy week.  I week ago I went to Spain.  I was back in town for two days before leaving on a work trip to San Francisco.

I was only in San Francisco for three days, and my days were mostly filled with work stuff.  I was still able to see the pier, the ocean, and some seals.  I also walked around Chinatown and ate some tasty Mexican food.

Makai Palak - Spinach Corn Curry

I don't know anything about this curry.  I found it because I googled recipes that use kasoori methi.  I have a large quantity of kasoori methi because I made ghormeh sabzi over a month ago.

Kasoori methi is dried fenugreek leaves.  A website called Gourmet Sleuth said it tastes like a combination of celery and fennel.  It is a little bitter.

Spinach with Golden Raising and Pine Nuts

I have been enjoying the Olympics.  Since it started, I have at least spent two hours a day watching events.  It's funny that I am spending more time sitting on my behind watching people perform amazing physical feats.

Yesterday I even ate a big bowl of chocolate ice-cream while watching gymnastics and swimming.  I remember when I was a child I thought all the Olympic athletes were old.  Now I realize that they are all fairly young.  When did that happen?

Palak Paneer

A few weeks ago, I went to an Indian cooking class in my community with a friend.  We make a few types of curry.  They were all vegetarian.  One had peas and mushrooms, and its sauce had pureed cashews.  It was delicious.

We also made palak paneer.  I have always enjoyed palak paneer in restaurants but had never made it myself until the class.  I had to look for paneer cheese a few places before I found it.  My neighborhood grocery store didn't carry it.  I bought my paneer at Whole Foods.  Too bad I don't live near an Indian grocery store.
