Stew Chicken (Belize)

A couple of years ago, I went to Belize with my parents, brother, and sister in-law.  We spend a day in Guatemala too.  It was a fun trip with great company.

We went in February.  February is a great month to go somewhere warm.  By the time February rolls around, it is still cold but I'm more than tired of winter.  I little respite to a warmer climate is a welcome change.

Belizean Rice and Beans

In my community, there is a 5k every Friday night in April.  Last year I ran two of the races.  I was feeling ambitious this year and signed up for all five.

Each week I have ran a little faster then the week before.  I'm not surprised the first week was my slowest time.  I was a little sore that Friday, and I wasn't in a rush.

Belizean Stew Chicken

A couple of weeks ago, I went to Belize with some family members.  I had a wonderful time.  The scenery was breathtaking, and we did many fun and exciting activities.  One day we also went to Guatemala to see Tikal.

I was surprised at the many Mayan ruins sites in Belize.  I had always associated Mayan civilization with areas in Mexico and Guatemala.   In addition to the Mayan sited we visited, we also went zip lining, cave tubing, and snorkeling.
