Mincemeat Cookies

Happy Easter tomorrow!  When I was growing up, we would do Easter baskets on Saturday.  We would also usually go hiking in the desert on the Saturday before Easter as well.

I have fond memories of the Saturday before Easter.  My cousins, aunts, and uncles would get together to go have a picnic and take a hike. We would always have a trail mix that my aunt called bird seed.

I seem to have a problem posting recipes as much as I did in the past.  In the past, I would try and post a couple times a week.  That is a pretty intense schedule.  Now I post two or three times a month.  I don't have a problem with that, but I now have a backlog of food pictures.

I may need to start making old recipes again so I don't feel compelled to take pictures.  I took a break from making Thai food because I had made so many Thai curries.  I guess I need to pull out a few of my favorites and make them again.

Ginger Cookies Dipped in White Chocolate

I made this cookies a during the holidays.  It has taken a while for me to post about them.  They are really more appropriate for Christmas, but I am sure they would still be delicious for Valentine's Day.

What makes these really special are the cool star shaped sprinkles.  I still have at least half a bottle of these sprinkles.  I'll have to think of something special to make that would be improved with star shaped sprinkles.

Peppermint Chocolate Pancakes with Chocolate Chips

I haven't posted for a while.  I indented to over the Christmas holidays, but other things got in the way.  Since returning back from the holidays I haven't been busy, just lazy.

Yesterday I saw Miss Saigon for the first time.  I had heard about the musical, but I was unfamiliar with the story line.  I also had never heard any of the music before yesterday.

Chocolate Pancakes with Mint M and Ms

This month is flying by.  I only have a week and a half before flying home for Christmas.  Yesterday I participated in a white elephant gift exchange.  I had forgotten about it until the last minute.  I was already leaving when I realized I needed to bring a white elephant gift to the party.

I ran back up to my apartment and grabbed one of my cookbooks from my shelves and threw it into a bag.  After someone had selected and opened the gift, I saw a piece of paper peaking out from behind the front cover.

Another Christmas has come and gone.  How quickly this year has gone by!  I had a wonderful Christmas, and it isn't over yet.  My family is having one more Christmas party this Thursday.

We are having a French Canadian Christmas celebration.  We will be eating poutine, sugar pie, and meat pie.  The sugar pie is really just a custard inside of a pie shell.  I was worried it was going to be a sugar overload, but it sounds tasty.

Peanut Brittle

It is Christmas Eve.  I can hardly believe that it has already arrived.  The month between Thanksgiving and Christmas flew by.

I am going home for Christmas, but I am leaving and arriving late.  My flight leaves six tonight.  I hope my flight goes well, or else I'll end up arriving very early Christmas day.

Chocolate Pumpkin Pie with Hazelnut Crumble

Is it still appropriate to make and eat pumpkin pies?  I think so.  I believe pumpkin is a winter vegetable.  I'm a big fan of pumpkin anyway, and I think it should be eaten more regularly.

I made this yummy pie with my sister.  It was her idea to use hazelnuts instead of pecans.  Impressively, my parents had both types of nuts.  After we made this pie, my sister pained Christmas trees and candy canes on my toe nails.   She's an artist!

Cranberry Bread with Orange and Oats

My parents receive their local newspaper.  Every week or so they get a free insert tucked in the center fold of the newspaper.  I have forgotten the name, but it has articles and recipes.  My mother clipped this recipe out of the insert.

I tried the recipe out when I was home.  I didn't make the recipe as directed.  It calls for whole wheat flour.  My parents have a bucket of wheat and a wheat grinder.  My father has taken on the responsibility of official wheat grinder.

Gingerbread Pancakes with Toffee Bits and Chocolate Chips

I just realized that my local library closes at 9pm Monday through Thursday.  I thought it closed at 6pm, which is about when I get back from work.

This knowledge is a game changer.  For months, I have planned my library visits on weekends or days I had off of work.

Mrs. Fields Chocolate Chip Cookies

My mother had this recipe clipped from a newspaper.  The full title of this recipe is "Top Secret Mrs. Fields Chocolate Chip  Cookies.  I'm not sure how the newspaper happened upon this top secret recipe.

I'm even less sure the recipe is authentic.  I would like to imagine some sinister and disenfranchised Mrs. Fields' employee selling the recipe to the newspaper, but I imagine most Mrs. Fields Cookie stores get their cookie dough preprepared and frozen.  The cookies are homemade to the extent that the employees put them in the oven.

Peppermint Fudge

I have made a few candy recipes this Christmas.  I already posted cookie dough truffles  and English toffee.   I made the truffles, toffee, and this fudge as gifts for friends.  I'm usually not so on top of things.

I was well prepared for Christmas this year.  I finished most of my Christmas shopping by December, and I made loads of Christmas candy.  I didn't send Christmas cards, but you have to chose your battles.

This is the second blog post I have written on my new computer.  My old laptop was a little over eight years old.  An Apple technical assistant called it a fossil.  After using my new laptop for a few days, I have to agree.

This computer is so quick.  When I start a program or download something, it is done in less than half the time as before.  I can't believe I waited so long to get a new computer.

English Toffee

Tomorrow I am going to buy a new laptop.  I have been on the verge of buying a new one for over a year.  My current laptop moves glacially.  Its operating system is so old it no longer recognizes my cell phone.  It's time.

I have done a little research, but I need to do more.  I like researching traveling destinations.  I browse pages and pages of recipes and dresses online, but I'm having a hard time getting excited about learning about computer stuff.  Luckily, my computer needs are pretty basic.  Most computers would fit my requirements.

Gingerbread Pancakes with Carmel and Chocolate Chips

I have had an open jar of molasses in my cupboard since last Christmas.  I used that very jar to make these gingerbread pancakes.  I didn't feel ill after eating them so it seems molasses has a long shelf life.

This is as good a time as any to talk about molasses.  Molasses is also called black treacle.  Molasses sounds much more appetizing than black treacle.  Black treacle sounds like a kind of moss that grows in dark and damp places.
