Cabbage, Sausage and Potato Soup


Yesterday after work I went to an art museum a few blocks away from my work.  The weird thing is I never knew that it even existed. 



It just proves that you have to live someplace for a long time before you know all the ins and outs of the place.

Roasted Carrots with Cardamom Butter


This is a healthy change from what I usually post about on my blog.  It is good to switch it up every once in a while.


I don't know if these are the healthiest carrots because the recipe does call for butter and oil.  All things in moderation, right?

Overnight Carrot Cake Oats


I have found a replacement for my pancake addiction.  For the last month, I have eaten overnight oatmeal almost everyday for the last month.  


It is a very convenient breakfast because you can prepare everything the night before.  I also like that it doesn't need to be heated.  You can grab it and eat it on the go with no morning preparation.

Carrot Cupcakes with Cream Cheese Frosting


I usually eat chocolate cake for my birthday because it is my favorite.  I wanted to change it up this year, so I decided to make carrot cake.  Even though carrot cake contains no chocolate, it is a wonderful cake.


I like my carrot cake full of yummy treats like walnuts, coconut flakes, raisins, and pineapple.  I also like noticeable pieces of carrots.  Some recipes use carrot puree, but I like to know I'm eating carrot cake.

Creamy Carrot Salad with Raisins


It's chilly outside.  There is no escaping it; winter has come.  I'm prepared this year.  I have new snow boots, mittens, and an array of scarves.  I want to buy a box of hand warmers, the kind you smash to activate.


The older I get, the less I enjoy winter.  At least I can be prepared with thick layers and warm feet.

Carrot Banana Muffins


I made these tender and delectable muffins last week.  They are packed full raisin, pecans, and sweetened coconut.  


I think pecans are my favorite nut.  They are native to Mexico and the southeastern United States.  Pecan is an Algonquin word meaning nut with a firm shell.

Balsamic Glazed Carrots


Next week the Pope is coming to Washington DC.  I'm not catholic, but I really want to see him.  I work close to where he will be some of the days he will be in town.



The days he will be in town, I am going to track his movements.  Hopefully I can catch him driving by in a car or something.  He seems like a really cool guy.  I'm not sure if that is an appropriate thing to say about the Pope, but that's what I think.

Carrot Salad - Zalatat Jizar


This is the last recipe I made from the Iraq Cookbook; I turned it into the library earlier this week.  I made several things from the book, but my two favorite recipes were carp with rice and rice with fava beans.  


I think the next cookbook I get from the library will either be French or Peruvian.  I haven't made much French food, but it seems like it might be complicated.

Carrot Cake Pancakes


I have shared a string of pancake and carrot recipes.  This won't be the last pancake recipe I post either, because I just made a new kind today that I'll post in the near future.  


I like making pancakes for dinner because they are super fast, and I can eat the leftovers for breakfast.  Pre-made  are great because there fast but still homemade and delicious.


The original recipe came from the food network.  I made a few alterations of course.  You will be interested to know that carrots were used in deserts since the medieval period.  Sugar was scarce, and carrots added sugar.

Carrot, Pineapple and Coconut Salad


Today I saw the second ballet of my life.  It was Don Quixote.  I have never read the book and was only partially familiar with the story.  It's impressive how much the dancers can convey without words. I prefer plays, but ballets are fun too.


I have been on a carrot binge lately.  I made carrot muffins last week, and I made carrot cake pancakes yesterday.  I need a brake from grating carrots, especially since my roommates grater is broken.


This was a yummy, spring salad.  The original recipe came from another blog called Add a Pinch.  I added coconut, walnuts, and green onions to her recipe.

Carrot, Coconut, and Pineapple Muffins


This is the perfect spring breakfast.  For some reason, carrots seem like a spring vegetable.


They're moist, tender, flavorful, and healthy.  A perfect way to start your day.  I like making a batch of muffin early in the week and then quickly grabbing them for breakfast for the rest of the week.



When I have a recipe with a high yield like this one, I like to place a few in the freezer.  


I replaced the eggs with egg whites, used less sugar, and substituted some of the oil with apple sauce.  These are probably the healthiest muffins ever, but don't worry, they really are luscious.
