Chocolate and Peanut Butter Swirl Muffins


I am currently eating lots of cheese and crackers.  I have been eating some type of cheese and crackers a few times a week for over a month.  I have eaten many delicious varieties of  cheese.


I can't even remember all of the kinds I have tried.  I currently have Jarlsberg, a mild cows cheese with jalapeño, and a couple of goat cheeses in my fridge.

Pecan Pie Muffins


Yesterday I saw an interesting animated movie called 9.  It is a post apocalyptic world.  All of the characters are man made.  Either I didn't understand all of the movie or there were some whole in the plot.  It was a good movie regardless.


These miniature, automated bean bags were racing to safe the world.  All of the humans were already dead.  I wasn't crazy about the happy ending where all the humans were dead but oh well.

Pumpkin Muffins with Chocolate Chips


It's pumpkin season!  I currently own two jars of pumpkin butter and some pumpkin cereal from Trader Joe's.  I went to a party on Sunday where I ate pumpkin sandwich cookies.  I'm a sucker for seasonal products at the grocery store.


It's always good to have a few muffins stuck in your freezer.  They make a quick, last minute breakfast. I have a few muffin recipes on my blog.

Chocolate Zucchini Muffins


I am typing this while watching the Olympics.  Swimming is still in full swing.  I wasn't sure I would be able to watch the Olympics from home, but my roommate worked out a way to view it from our apartment.  She's a miracle worker.


The Olympics provide hours and hours of entertainment.  I always know what I'll be doing in the evening.  I won't know what to do with all my free time when the Olympics are over.

Banana, Coconut, and Mango Muffins with Chocolate Chips



For unclear reasons, I decided to take a calculus class this summer.  It has been a good experience for the most part.  It is good to know that I  can still think quantitatively.  


The negative aspect of the class is that it has been a huge time drain.  I have class twice a week for three and a half hours each class.  On the days I don't have class, I often have a few hours of homework to complete.

Peach Cornmeal Muffins


I went to Aldi's a couple of days ago with a friend.  Neither of us had been before.  I had heard good things about the store, but I wasn't sure what to expect.


It wouldn't be a good grocery store to visit if you were looking for a specific item.  They have a random assortment of odds and ends.  I'm sure they always have the basics, like flour and butter.  When I went, they also had things like jalapeño cheese curd, chorizo, and proscuitto.

Carrot Banana Muffins


I made these tender and delectable muffins last week.  They are packed full raisin, pecans, and sweetened coconut.  


I think pecans are my favorite nut.  They are native to Mexico and the southeastern United States.  Pecan is an Algonquin word meaning nut with a firm shell.

Chocolate Muffin with Cherry Filling and Berry Glaze


These are muffins, not cupcakes.  Why?  Because I ate them for breakfast. 


It doesn't matter that they were full of sugar and chocolate chips.  The glaze was so thin that it didn't count as icing.

Peanut Butter and Jelly Muffins


This week, I went to the Arlington County Fair with a friend.  It was a lively and fun atmosphere.  We didn't eat any fried and battered Oreos, candy bars, Twinkies, or any other sugar laced treat.


They don't have enough parking at the fair so they are encouraging attendees to use a shuttle.  The shuttle goes to several metro stops.  My friend and I went to stop with a line of evening shuttles taking people back to their apartments.  Finding the right shuttle was a chore.

Cranberry and Chocolate Oatmeal Muffins


When I lived with my parents, I regularly watched PBS.  I have started getting in the habit again, and it's been delightful.


I'm currently binge watching American Experience and Antiques Roadshow.  I just finished an episode on Thomas Edison.  I didn't know he was instrumental in inventing motion pictures.  Before watching American Experience, I was just aware he invented electricity.

Do you ever second guess yourself?  I do it all the time.  This weekend I went Christmas shopping, and after every purchase, I debated if I made the right choice.  


It doesn't matter if the decision is insignificant.  Deciding what type of hair gel or what to order at a restaurant is a tough decision for me.

Lime and Coconut Muffin


Well hello winter!  It was so cold today in DC.  I wore a long sleeve shirt, a sweater, and a scarf.  Pretty soon I'll start wearing tights under my pants.


In other news, I used ten pounds free weights in my gym class today.  It was a first for me.  When I started taking this gym class, I used 5 pound weights.  I moved up to 8 pounds about a month ago.

Chocolate Banana Muffins with Peanut Butter Chips


It rained all day today.  I usually walk to work, as I did today.  By the time I arrived at work, my shoes were soaked.  I spent the whole day shivering because of my wet shoes. 


Shivering is a perfect excuse to drink warm drinks.  I drank cup after cup of this yummy orange and cinnamon tea.  What a hardship!

Pumpkin Chocolate Chip Muffins with Cashews


It isn't the season for pumpkin yet, but because of canned pumpkin, I don't think we should limit ourselves to only eating pumpkin in fall.


Pumpkin is a great baking ingredient because it keeps the baked good moist.  It would be difficult to over bake and dry out these muffins.



This recipe does not indicate that I am ready for Fall.  Fall is my favorite season, but this summer has gone by too quickly.  I'm not ready to say goodbye to summer yet.  I have only gone to two barbecues, and I haven't even been to the beach.

Peach and Coconut Muffin


My last post was so healthy that I felt I needed to update my blog quickly with a sugary baked good. Roasted vegetables are an important part of any diet, but no one browses food blogs to see vegetarian sandwiches.


I recently had some family members and friends proofread a few essays I wrote.  It's funny how people notice different things.  Different people noticed grammar errors, wanted better descriptions, suggested I rewrite an entire essay, and wanted me to rework sections.  



It reminded me of when I was applying to jobs.  I asked many people to review my resume.  It didn't matter how many people had made edits before, a new person would always have suggestions.  That is the tricky thing about writings: it's never really finished.  You can always rewrite, edit, and stew over your words.
