Moroccan Beef Stew

It snowed today.  It is supposed to get up to the 50s tomorrow so it probably will not last long.  Many people worked from home because of the snow.  I went into work, and it was so quiet.  I had the place to myself.

In other exciting news, I saw the musical Wicked last weekend for the first time in my life.  I remember that a little over ten years ago it was so popular.

Slow Cooker Spanish Beef Stew

I don't know if this it authentic to any region of Spain, but it was tasty and hearty.

It is made in a slow cooker so this dish is also very convenient.  I just put everything in the crock pot and let it do its thing for a few hours.

Slow Cooker Beef Stew

I made this beef stew over last Christmas vacation.  It was probably one of only a few things I ate last Christmas that wasn't sugar filled and had some nutritional benefit.

I can hardly believe it is already April.  This year is going to go by fast.  Yesterday I went to Philadelphia.  We went to Eastern State Penitentiary, among other things.

Slow-Cooked Tex-Mex Chicken and Beans

I keep hoping that as I go to the gym regularly, exercise will feel easier and easier.  I went to the gym after work today, and I was worthless by the end of my class.

I am going to think I was so lethargic because I was hungry.  By the end of the class, I stopped performing the circuit well before the bell to rest.  Oh well, some days I just don't feel up to par.

Turkey Chili

I'm writing this from Utah.  I am home for two weeks.  I haven't visited for such an extended period in years.

After Thanksgiving, my grocery store was selling cheap turkey.  I bought a small bird.  It was my first time cooking turkey.  I was pleased with the results.

Chicken Stew

This is the second recipe I have posted that uses a slow-cooker.  Slow-cookers are a clever invention.  I should use them more frequently.

The slow-cooker was developed by the Naxon Utilities Corporation of Chicago.  The product was called the Naxon Beanery All-Purpose Cooker.

Jamaican Lentil Stew with Coconut

I achieved a feat of endurance last night.  In the span of a couple of hours, I ate four brownies and about a third of a cup of jelly beans.  I did this after eating dinner.

My belly was about to burst, and the thought of putting something in my mouth and chewing maked me ill.

Kale and Creamy Bean Stew

I feel like this winter is never going to end! It gets warm for a few days, but then it gets cold again for several days.

Today I am not working because it is snowing too heavily. Even though my heart urns for spring, it is still winter. At least I can still make and eat warm and hearty stews like this kale and creamy bean stew.

Lamb Stew

There are several foods I associate with my father. They include peaches, dark chocolate, German chocolate cake, waffles, and lamb stew. When I was growing, up his cooking repertoire consisted heavily of stews.

While looking through the Basque cookbook for our Christmas Eve celebration, he was drawn to this lamb stew recipe. He suggested we make it more than once. Luckily we made it because it was flavorful and comforting.

Green Chile Stew

This is the last recipe I did at home.  It's appropriate that it is one of the foods, like peaches, waffles, and lamb stew, that remind me of my father.  He really loves green chilies.  He frequently makes this stew and eats it for lunch at work.  There is a restaurant in a partially uninhabited town called East Carbon that sells green chili burritos, and my father has a soft spot for them.  I'm actually not sure the restaurant is still open.

The picture of the final product isn't great, but it is a great stew nonetheless.  The ingredients we used were 2 pounds and 9 ounces pork roast, 8 yukon gold potatoes, 1 large onion, splash of extra virgin olive oil, 2 tablespoons flour, 1 tablespoon garlic powder, and 4 cans roasted green chiles.
