Chai Spiced Pancakes with Chocolate Chips


Yesterday I went to a restaurant with some friends.  We asked our server if we could split the check.  I know many servers do not like doing that.  He should have refused because he has such a hard time doing it.


He didn't do it correctly two times.  On the third attempt, we just asked to have him split it equally five ways, but that didn't work out either.  I think he was new to the job, and needed some help.

Chocolate Pancakes with Reese's Pieces and Peanut Butter Cups


We have been having peculiar weather where I live.  Last week it was very cold and snowy.  Today it reached 70 degrees.  In just one week the daily high temperature rose at least 40 degrees.


It was so warm yesterday and today that I rode my bike to work.  It has been a while since I could comfortably ride my bike to work.  Next week the temperature is going to get back down to the 30s and 40s, but this Spring time weather was been a wonderful break.

Peppermint Chocolate Pancakes with Chocolate Chips


I haven't posted for a while.  I indented to over the Christmas holidays, but other things got in the way.  Since returning back from the holidays I haven't been busy, just lazy.


Yesterday I saw Miss Saigon for the first time.  I had heard about the musical, but I was unfamiliar with the story line.  I also had never heard any of the music before yesterday.

Pumpkin Pancakes with Chocolate Chips


It's the Christmas season! What better way to welcome in the Holidays with pumpkin pancakes?  


I feel like pumpkin pancakes are appropriate for Thanksgiving and Christmas.  The pumpkin makes perfect for Thanksgiving, and the cinnamon, ginger, and allspice make them a good fit for Christmas as well.

Peanut Butter Banana Pancakes with Chocolate Chips and Reese's Baking Cups and Reese's Pieces Candy


It has been awhile since I posted.  I had some family in town for a bit and then I went to Universal Studios to see the Harry Potter themed sections.


It was wonderful to see family.  We explored the city a little bit and saw a play.  The time went by too quickly.  Universal Studios was lots of fun.  I spend so much money on Harry Potter merchandise.  I think I spend about $50 dollars on candy alone.  Given that all the prices are inflated at a theme park, I didn't actually buy that much candy.  Each chocolate frog was ten bucks.

Crustless Spinach Quiche


I don't make enough egg dishes.  Eggs are so versatile.  They are tasty and healthy too.  They are also pretty cheap for a protein.  


I made this dish a couple of weeks ago for a brunch.  I used my pie pan, which I seldom use.  I think that needs to change as well.  Especially since my parents gave me a pie cookbook for my birthday several months ago, and I still haven't used it.

Whole Wheat Banana and Chocolate Pancakes with Peanut Butter Chips


It has rained so much in the area where I live in the last few days.  It rained all day Saturday and has been raining off an on since then.  The forecast predicts rain tomorrow as well.



I like rain.  It is pretty and life-giving.  I do not like riding my bike in the rain though.  I have taken a brief hiatus from biking to work this week.

I'm posting another pancake recipe today.  I can eat pancakes for any meal.  These have oats and whole wheat flour, so they are full of fiber.  


Of course, I added chocolate chips and toffee bits, so it's not really healthy.

Whole Wheat Pancakes with Coconut, Walnuts, Coco Nibs, and Chocolate Chips


Happy Mothers' Day to all the Mothers out these.  I sent my mother a card, but she is not going to get it in time.  I just put it in the mail yesterday.  I am going to see her in less than a week though.


I went to the beach yesterday.  It was my first beach trip of the year.  I usually only go once or twice a year, but I hope to go a few more times this year.  The weather was wonderful.  It was warm enough to be in swimsuits, but it wasn't too hot.  We didn't have umbrellas, but still felt perfectly comfortable.

Whole Wheat Pancakes with Coco Nibs, Chocolate Chips Toffee Bits, and Walnuts


I ran a half marathon yesterday.  It was just the fourth half marathon I have ever run.  It has been two years since my last race, and I'm in worse shape then I was at that time.


Regardless, I finished and with a respectable time.  It wasn't the fastest I have run a half marathon, but not bad.  It was actually only 11 minutes slower than my fastest time.  I am a slow runner even when I am better prepared.

I have jury duty on Monday.  It is only the second time in my life that I have had jury duty.


The first time, I wasn't selected to be on the jury.  I wanted to be selected so that I could have the experience.  This time I am a little busy at work, so I would prefer to not be selected.

Monster Cookie Pancakes


Pancakes! My favorite breakfast food.  I made these pancakes last weekend, and I am still eating them for breakfast.  This recipe makes a large batch of pancakes.


It is a unique recipe.  I haven't make or eaten monster cookie pancakes before.  This is a hearty and a little decadent recipe great for the cold winter mornings I have been experiencing.

I'm leaving to go home for Christmas in just a couple of days.  I'm pretty excited about it.  I have already started packing because my schedule is full for the next couple of days.


Tomorrow I am going to go see the new Star Wars movie.  I'm surprised I haven't hear any spoilers yet.  I'm glad I will view it without any idea what to expect.

Chocolate Pancakes with Mint M and Ms


This month is flying by.  I only have a week and a half before flying home for Christmas.  Yesterday I participated in a white elephant gift exchange.  I had forgotten about it until the last minute.  I was already leaving when I realized I needed to bring a white elephant gift to the party.


I ran back up to my apartment and grabbed one of my cookbooks from my shelves and threw it into a bag.  After someone had selected and opened the gift, I saw a piece of paper peaking out from behind the front cover.

Cinnamon and Brown Sugar Pancakes with Cinnamon and Sugar Pop-Tarts


I just got back from spending a little over a week in Spain.  I am exhausted and am going to bed probably within an hour even though it is only eight.


Spain was wonderful.   I think it is one of my favorite countries.  We visited Madrid, Barcelona, Granada, Cordoba, and Sevilla.  I had such a good time that I think I'll go back and visit other cities.

Chocolate Pancakes with Skors


We are having some strange Fall weather this week.  It was wet and rainy on Monday, which isn't unusual for Fall.  The unusual thing about Monday is that it was humid, hot, and muggy.  It has been hot and sticky since then.


I can't go to long without posting a pancake recipe.  I have a big soft spot for pancakes.  The are a great way to eat sweet carbs for breakfast.
