Samoa Pancakes


I'm posting another pancake recipe.  I'm in a pancake state of mind.  I recently posted about chocolate turtle pancakes, chocolate cherry pancakes, and red velvet pancakes.


I recently posted a Samoa brownie recipe as well.  A couple of years ago, I posted a recipe for a Samoa pie.  The pie didn't turn out that well actually.  The chocolate filling didn't set up well.  I might need to give it another go in the future.



To make this recipe I added 1/3 cup Milk Duds, 1/3 cup chocolate chunks, and 1 cup sweetened and shredded coconut flakes.  Yum!



The complete list of ingredients are 1 cup milk, 1 egg, 2 tablespoons melted butter, 1 cup all-purpose flour, 1/3 cocoa powder, 1/4 cup sugar, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 cup sweetened coconut flakes, 1/3 cup Milk Duds, and 1/3 cup chocolate chunks.



I combined the flour, cocoa powder, sugar, baking soda, and salt in a bowl.  I whisked the dry ingredients together.




I added the milk, egg, and melted butter into the flour mixture.  I whisked the batter together.



I stirred in the coconut, Milk Duds, and chocolate chunks.



I scooped a third of a cup of batter into a hot and greased skillet.  I cooked the first side until bubbles started forming near the center of the pancake.


I flipped the pancake and cooked the other side for a few minutes.  As is my custom, I served this with greek yogurt.  I think topping this sweet caramel sauce and additional coconut would have been even tastier.


These were decadent and rich pancakes.


This recipe make a fluffy and tasty pancake.


The chocolate is dense and rich.  The coconut added sweetness, flavor, and texture.


The chocolate chunks were creamy and smooth.


I wasn't crazy about the Milk Duds.  They were a little to soft, especially after being cooked in a hot skillet.   Often the caramel would melt, and escape all over the pan.  It was delicious but messy.  I think a firmer caramel would have been better.



Overall, these are very tasty pancakes.  They were sweet and scrumptious.


 There is nothing like eating dessert for breakfast.  They were a win in my book.
