Apple, Caramelized Onion, and Cheddar Pizza with Walnuts


It's Friday! I have officially worked at my new job for three weeks.  I like my new job.  I'm busy, and I'm learning new things.


My new job doesn't have a gym.  I became accustomed to exercising at a gym at my last job.  This month I have been riding my bike to work so often that I haven't felt the need for much more exercise.
That is going to change when winter comes.  I don't exercise as much outside.  I'll be much more likely to exercise if I can do it from the confines of a warm building.  


Exercising outside in winter is tricky.  I want to layer on jackets and socks, but then I get hot and sticky.  


I made these pizzas on frozen naan from Trader Joe's.  I have made pizza on naan in the past.  I used naan in my bacon, gorgonzola, and jam pizza; sausage, caramelized onion, dried cherry and walnut pizza; mango chutney and ham pizza; and Hawaiian barbecue chicken pizza.  It's the perfect size for one person.

I made four pizzas over a few days.  The ingredients for four personal pizzas are 1 large onion, 2 tablespoons extra virgin olive oil, 1 teaspoon salt, 3 tablespoons butter, 2 apples, 2 teaspoons lime juice, 2 tablespoons honey, 6 ounces sharp cheddar cheese and 1/2 cup walnuts.



I added the olive oil to a hot skillet.



I sliced the onion thinly and added it to the hot oil.  I added salt.


I let the onions caramelize over medium-hot heat for around 30 minutes.


In another skillet, I melted the butter and added the apples.  I removed the peel and sliced the apples.  I ended up using two skillets to brown and cook the apples so that all the apples came in contact with the pan.  I added the lemon juice and honey.  I cooked the apples for 5 to 10 minutes.



I added some caramelized apple on the frozen naan.



I added caramelized onion, slices of sharp cheddar cheese, and crushed walnuts.



I baked the pizza for 7 minutes at 400 degrees.


I let it cool a little before digging in.  I didn't want to burn my mouth!


This pizza was fantastic.  It was flavorful and delicious.  I wouldn't change anything about it.


It was savory and sweet.


The textures were excellent.  The cheese was melted and gooey.  The walnuts were crunchy.


The sharp cheese and sweetened apples were an excellent combination.


The onions added additional caramelization flavor.


If I were you, I would make this pizza.  It was scrumptious.


 It would make a delicious meal any time of the year, but it seems very appropriate for fall.


It made a toothsome meal.  Yum!
