Brussels Sprouts and Butternut Squash Salad with Feta and Pecans


I am posting this recipe from Iceland.  I wrote the post before leaving, so I'm not sure if I'm having wonderful adventures or not.


I made this recipe up.  Brussels sprouts are my favorite vegetable, and there are so many beautiful and creamy butternut squash around this time of year.  I decided to merge these two scrumptious ingredients together, along with pecans and feta, to make a delightful fall salad.

Orange Glazed Chicken


Today I have eaten a giant cinnamon roll and a soft serve ice cream cone.  It's been a good day.


My brain is still twirling from the sugar.  Every once in a while I need a break from eating fruits and vegetables and just eat junk food.

Coconut and Blueberry Banana Bread


I didn't see Pope Francis.  I'm a little sad.  I planned on seeing him, but work got in the way.  I enjoy my job, and I really enjoy having money, but sometimes work can really cramp my style.  Now I'll have to go to Italy to see him.  What a shame.


In other exciting news, I went to Walmart today for the first time in months.  I have heard bad things about how little they pay their employees, but that place is cheap.  Apparently they are cheap for a reason.

Vegetable Pasta


Today I went on the most delicious bike ride.  The temperature was ideal.  The leaves are still green, but Fall is in the air.


The bike path follows a river.  There were a few sail boats floating idyllically.  It was very picturesque.

Shrimp Red Curry


Thai red curry is red because of dry red spur chiles.  The paste is traditionally made with a mortar and pestle.  I didn't make my red curry paste.  I bought it at the supermarket.  


If I had made it myself, it would have required things like galangal, lemongrass, shrimp paste, kaffir lime leaves, and coriander root.  Buying curry paste is a little easier than finding these exotic ingredients at the local grocery store.

Applesauce Pancakes


Fall is coming!  Fall is my favorite season.  The colors of the leaves are breathtaking.  The crisp weather is refreshing after a hot summer.



Fall foods are heartier and more comforting.  Everyone starts using warmer spices like cinnamon and nutmeg.

Balsamic Glazed Carrots


Next week the Pope is coming to Washington DC.  I'm not catholic, but I really want to see him.  I work close to where he will be some of the days he will be in town.



The days he will be in town, I am going to track his movements.  Hopefully I can catch him driving by in a car or something.  He seems like a really cool guy.  I'm not sure if that is an appropriate thing to say about the Pope, but that's what I think.
