Applesauce Pancakes


Fall is coming!  Fall is my favorite season.  The colors of the leaves are breathtaking.  The crisp weather is refreshing after a hot summer.



Fall foods are heartier and more comforting.  Everyone starts using warmer spices like cinnamon and nutmeg.  

It's nice to pull out my sweaters and scarfs.  Fall would be perfect if I didn't know winter was just around the corner.  There is no pleasure in winter.  Winter is bitter and unpleasant.  Blah!


I have fully embraced Fall by taking up knitting.  I learned to knit  a few years ago, but I needed a refresher.


My mother taught me to knit.   She is a talented knitter, but I have never progressed beyond scarves.  I'm in the process of knitting a scarf right now, but my goal is to knit a sweater.


These yummy applesauce pancakes make an appropriate Fall breakfast; Apples are quintessential Fall foods.  The recipe comes from Martha Steward.  I made them especially festive by adding Fall spices.


The ingredients are 1 teaspoon cinnamon, 1/2 teaspoon ginger, 1/2 teaspoon nutmeg, 2 cups all purpose flour, 3 tablespoons sugar, 1 tablespoon baking powder, 1 1/2 teaspoons salt, 2 large eggs, 2 cups milk, 3/4 cup applesauce, and 4 tablespoon melted butter.


I added the flour, sugar, baking powder, salt, nutmeg, ginger, and cinnamon into a bowl.  I whisked these ingredients thoroughly.  




I added the room temperature milk, eggs, melted butter, and applesauce.  I whisked the batter together.  I ended up adding a little more flour to get a thicker batter.



I greased a hot skillet and added a half of a cup of batter to the pan.  I flipped the pancakes when little bubbles started forming in the center of the pancake.  I cooked the other side for a few minutes.


I ate these pancakes with leftover cherry pie filling.  It was a scrumptious combination.  The recipe suggests using extra applesauce as a topping.


The pancakes were soft, fluffy, and tender.


The spices were warm and inviting.


The apple was more subtle than I anticipated, but the pancakes had a noticeable apple flavor.


They were delicious and homey.  I would definitely make them again.
