I have been enjoying the Olympics. Since it started, I have at least spent two hours a day watching events. It's funny that I am spending more time sitting on my behind watching people perform amazing physical feats.
Yesterday I even ate a big bowl of chocolate ice-cream while watching gymnastics and swimming. I remember when I was a child I thought all the Olympic athletes were old. Now I realize that they are all fairly young. When did that happen?
I anticipate spending a few hours tonight glued to the TV watching more events. I don't mind being a little lazy because of the Olympics. It only lasts two weeks, and it's the only time I watch some sporting events.
This recipe came from a cookbook entitled, "Deliciously Healthy Dinners." As you can tell from the title, all the recipes are healthy. It is the first recipe I made from the book. I'm pleased with the results. I'll probably use the cookbook again.
I picked the cookbook up from the gym at my office a few weeks ago. I didn't even flip through the pages until recently. The title was a little off-putting, but the recipes actually seem tasty. You shouldn't judge a book by its cover.
The ingredients are 4 tablespoons pine nuts, 2 10-ounce bag baby spinach, 2/3 cup golden raisins, 1/8 teaspoon ground nutmeg, and 1/8 teaspoon salt.
I added about a fourth of a cup of water to a nonstick pan over medium-high heat. I added a bunch of spinach. I let it wilt and then added another bunch of spinach. I kept adding spinach until the two bags were wilted. I added a little water when the pan looked dry.
I added nutmeg, salt, and raisins while the last bunch of spinach wilted. I removed the pan from the heat once the spinach was wilted. I moved any excess water and added the pine nuts.
This was a warm, inviting, and aromatic vegetable dish.
The dish had good textures.
The spinach was bright and vibrant. It was flavorful and tasty.

Haha, I know what you mean! I look at doctors these days who look like they belong in high school! I always forget about spinach as a side dish---this recipe looks wonderful!
