Chocolate and Peanut Butter Pancakes with Chocolate Chips


It is election day in the US.  I went and voted after work, but I'm not sure I did my community a service; I was so poorly informed on the candidates.


I have read a number of pamphlets this week, but I have no confidence in such biased material.  I did a little google search while in line.  With that little information, I votes.  Yikes!  I'm a menace.



My goal next year is to be better prepared.  I wasn't so busy that I couldn't have done a little research beforehand.  I was just lazy.


I have another peanut butter and chocolate pancake recipe on the blog, but this ramps up the chocolate with cocoa powder.  This one is my favorite of the two.


The peanut butter pancake recipe came from food.com.  I added cocoa powder and chocolate chips.



The ingredients are 1 cup all-purpose flour, 2 1/2 teaspoon baking powder, 1/2 teaspoons salt, 1/4 cup cocoa powder, 1/2 cup creamy peanut butter, 2 tablespoons sugar, 2 tablespoon vegetable oil, 1 large egg, 1 cup and 2 tablespoons milk, and 1/2 cup chocolate chips cookies.


I added the flour, baking powder, salt, and cocoa powder into a bowl.



I whisked the dry ingredients together.



In a separate bowl, I added the sugar, oil, and peanut butter.



I added the milk and egg into the bowl with the peanut butter.


I whisked the liquid ingredients together.


I poured the liquid ingredients into the dry.


I stirred it until it was almost combined before adding the chocolate chunks.  I finished stirring the pancake batter after the chocolate was added.


I poured between a half and a third of a cup of the batter into a greased and warm skillet.


Once bubbles started to form near the center of the pancake, I flipped it.


I served the pancakes with caramel sauce.  I think powdered sugar would be good too.


 These had a fantastic peanut butter and chocolate flavor, but they were not overly sweet.  They only had two tablespoons of sugar.  I didn't mind the level of sweetness; it seemed appropriate for a breakfast food.


 The texture was light and cake-like.  The amount of peanut butter and cocoa powder and spot on.  I was able to taste each ingredient.  I enjoyed these pancakes, and I'm sure it won't be the last time I make peanut butter and chocolate pancakes.

These pancakes sound interesting, why have I never made anything besides boring old pancakes? Need to change that stat!
