Since I moved, I have wanted to ride my bike to work. Today I did it. I feel a sense of accomplishment.
It was a beautiful day for a bike ride. It was sunny and not too hot.
The only problem is that my neck got sunburned. I suffer!
Ruben sandwiches could be my favorite sandwich. I like the spicy sauerkraut and peppery corned beef.
I made ruben quesadillas and a ruben brussels sprout salad, which I have yet to post. Both were delectable.
The ingredients for the quesadilla are tortillas, corned beef, sauerkraut, swiss cheese, and thousand island dressing. For each quesadilla I used two slices of swiss cheese, one slice of corned beef, about and eighth of a cup of sauerkraut, and two tablespoons of dressing. I used the dressing as a dipping sauce.
I put one slice of cheese on half of a tortilla. I added the corned beef on top of the cheese.
I removed as much of the liquid from the sauerkraut before layering it on top of the corned beef. I then added the remaining slice of cheese.
I grilled each side of the quesadilla until the tortilla was golden brown and the cheese was melted.
I served the quesadilla with some thousand island dressing.
I enjoy the sharp flavors of a ruben, and it translated well into a quesadilla.
The tortilla was crispy and golden, the cheese creamy and smooth, and the meat savory and moist. It was delectable!
