Crustless Spinach Quiche

I don't make enough egg dishes.  Eggs are so versatile.  They are tasty and healthy too.  They are also pretty cheap for a protein.

I made this dish a couple of weeks ago for a brunch.  I used my pie pan, which I seldom use.  I think that needs to change as well.  Especially since my parents gave me a pie cookbook for my birthday several months ago, and I still haven't used it.

Green Beans with Tomatoes, Olives, and Eggs

I hope you had a wonderful and relaxing Fourth of July.  I went to a beach in a neighboring state.  The temperature was prefect, but it was a little too humid in my opinion.

I didn't end up watching any fireworks.  We left the beach too early, and by the time we got back to the city, I didn't feel like making another trek to see the closest firework display.  I'm a little lazy.

Shakshuka

I got caught in the rain tonight on my way to my apartment.  I waited at the metro for fifteen minutes, but I eventually realized that the rain wasn't going to stop in the near future.  I didn't want to wait for an hour so I just went for it.

I was doused.  My feet sloshed in my shoes.  The edges of my library book's pages are damp and wavy.  I'm sorry pulic library.

Sausage, Caramelized Onion, and Cheddar Frittata

I went to the wonderful state of Texas this week.  My one regret is that I didn't eat any Mexican food.  It's a bit of a tragedy really.

Northern Virginia isn't known for it's Mexican food.  It's been a while since I have eaten quality Mexican food.

Asparagus and Mushroom Frittata with Feta

Next week I'm going to Dallas.  I have never been.

I'm going to volunteer at the Veteran Wheelchair Games.  I volunteered last year when it was held in Philadelphia with a group of my coworkers.

Eggs with Dates - Tamriyya Haneeney

This is probably the strangest thing I have ever posted on my blog.  It came from a cookbook I got at the library called, "The Iraqi Cookbook."  It has many delicious looking recipes, some of which I will attempt to recreate.

I choose this one because it was so unusual.  I have never eaten anything like it before.  I enjoyed the dish, but it was a little strange.   If your not open to strange, this might not be the dish for you.

The book said this is a famous sweet dish for poorer Iraqis.  The book also said there are 100 different types of dates grown in Iraq.
