Brussels Sprout Slaw with Honey Dijon Vinaigrette, Dried Berries, and Almonds


Today I rode my bike home from work in a rain storm.  When I say rain, I mean deluge.  I was soaked to the skin.


At times the rain was so hard it limited my eyesight.  I had to slow down to avoid running into sign or tree.

I have been so careful to avoid biking in a storm.  I check the weather before riding to work.  I checked last night, and the rain was supposed to come around 7pm.



The moral of the story is that weather predictions are not accurate to the hour.  If it's going to rain during the day, expect rain sometime during the day.


This was a fresh and fruity salad I made a few weeks ago.  It was light and healthy yet toothsome and crave-worthy.  The ingredients are 2 pounds brussels spouts, 1/2 heaping cup dried berry blend, 1/2 cup almonds, 1/4 cup honey, 1/4 cup dijon mustard, 4 tablespoons apple cider vinegar, 1 teaspoon salt, and 2 tablespoons extra virgin olive oil.


I shredded the 2 pounds of brussels spouts.  Be warned, this takes a long, long time.


I added the dried fruit and chopped almonds.


I made the vinaigrette by adding the mustard, honey, apple cider vinegar, salt, and extra virgin olive oil in a bowl.  I whisked the vinaigrette together until everything was emulsified.  




I poured the vinaigrette over the slaw and stirred well.


This was delightful, bright, and fresh.


The dressing was savory, sweet, and satisfying.


The chewy and sweet fruit and crunchy nuts provided texture and flavor.

  

 The brussels spouts softened a little in the dressing but were still crisp.  It was an appetizing salad that I ate with pleasure.

I love brussels sprouts more than anybody I know. This sounds like a perfect food - I could eat this as a main dish!!
