Melted cheese and chunks of bread must be the ultimate comfort food. Well, maybe it's second to chocolate ice cream. Additionally, fondue is an ideal party food because it's served family style, and you're compelled to sit in close proximity with everyone. It's wise to make this for a crowd or else you'll gluttonously eat the entire pot.
An attractive and talented young woman, let's call her Kate, showed me her recipe for cheese fondue yesterday. You'll be able to tell that we didn't make it at my apartment because the lighting is amazing, and there is a blender.
The recipe requires 1 cup cottage cheese, 1 cup milk, 2 tablespoons butter, 1 1/2 tablespoons cornstarch, 1 teaspoon garlic powder, 1/4 teaspoon dry mustard, 4 ounces sharp cheddar cheese, and 2 ounces swiss cheese.
To begin, she blended 1/4 cup milk and cottage cheese until it was smooth.
Then she melted the butter in a saucepan. We doubled the recipe so the quantities in the photos are double. That is a wonderful expression; She could be the next Vanna White.
Once the butter had melted, she added cornstarch, garlic powder, and dry mustard. These ingredients were mixed well.
She then added 3/4 cup of milk. We cooked this over medium heat until the sauce what thick. This took around 2 to 3 minutes. We stirred constantly during this time.
It's looking thick I'd say.
We reduced the heat and stirred in the blended cottage cheese and milk mixture.
Kate then added grated swiss and cheddar cheese.
An unidentifiable woman, who in addition to having beautiful hands is a skilled medical professional, stirred until the cheese had melted. Once melted, we ate.
This is a terrible picture. It's the worse picture of this entire post. Given that it is the final product, it should be the best. Despite the poor picture, the fondue was amazing. I literally ate those dots of fondue on the plate. We ate our fondue with copious amounts of bread and green apples. Yum!

Thanks! It is good. It didn't take very long either. I would say it took 20 minutes. Of course, there were three people preparing it. I like to think it is healthier than regular cheese fondu because it has cottage cheese.
