Chocolate Coconut Pancakes with Mini Cadbury Eggs


Another Easter themed recipe! I'm on a roll!  It will also be the last Easter recipe I post this year.


My Easter plans this year are pretty low key.  I'm going to go to Church, and afterwards I am going to a friends house for a late brunch.  It's in the afternoon, but we are eating breakfast food so I think it still counts as brunch.

Today was the first day I biked to work since last Fall.  It was a perfect day for it.  I didn't need a jacket, but it wasn't hot and muggy.  It was such a pleasant experience that I plan on doing it tomorrow as well.


In addition to enabling me to enjoy the beautiful weather, I'm pretty sure I will be able to fall asleep a little easier tonight.  I'm a little bit tired.



I used my favorite chocolate pancake recipe as the base of these pancakes.  I have used this recipe many times, and it is always delicious.  


I added coconut and mini chocolate Cadbury eggs, two very delicious and festive additions.


The ingredients for these pancakes are 1 cup milk, 1 egg, 2 tablespoons melted butter, 1 cup flour, 1/3 cup unsweetened cocoa powder, 1/4 cup sugar, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 cup sweetened coconut flakes, and 1/2 cup chopped Cadbury eggs.


I added the flour, cocoa powder, sugar, salt, baking soda, and coconut to a big bowl.  I thoroughly whisked all the dry ingredients together.





I added the egg, melted butter, and milk.  I whisked the batter together.



I then mixed in the Cadbury egg chunks.


I scooped a third of a cup of batter onto a hot and greased skillet.  I cooked it over medium high heat until bubbles formed in the center. I cooked the reserve side for another few minutes.


I think these would be yummy topped with whipped cream, chocolate syrup, and additional sweetened coconut flakes.  I ate mine with greek yogurt.  I recently found some pretty fantastic greek yogurt flavors, including toasted marshmallow and chocolate raspberry.  Both of those flavors were pretty tasty.


 These pancakes were delicious.


The texture of this pancake recipe is always great.  It is fluffy and thick.  The coconut added some chewiness and sweetness.  


The Cadbury eggs melted and became creamy, gooey, and luscious.


These made a toothsome and decadent breakfast.  They would make an excellent Easter weekend breakfast.




I wouldn't mine eating a couple of these chocolatey pancakes to start of my Easter weekend!
