Buffalo Chicken Pizza


If I could only eat one meal for the rest of my life, it would probably be pizza.  It is hard to mess up something as fantastic as bread and cheese.  They're are two of the most comforting foods in the world.


I haven't eaten pizza for a while, and it has been even longer since I made it at home.  It's been far too long really.


I would like to tell you that I made the crust myself, kneading the dough by hand.   The crust came from a can.



That is a pretty scandalous thing to admit, especially on a blog dedicated to food.  The crust wasn't amazing, but it was better than I anticipated.  You can't beat canned pizza crust for convenience either.


The inspiration for this pizza came the week before the Super Bowl.  Most food blogs were full of Super Bowl appropriate junk food.  I read several posts about buffalo chicken.


The ingredients for the pizza are 2 boneless, skinless chicken thighs, 1 tablespoon butter, 4 ounces blue cheese, 8 ounces mozzarella, 13.8 ounce pizza crust, and 1/2 cup Frank's Red Hot Original Sauce.  This was lots of cheese, but I like cheese.


I browned the cubed chicken thighs in the butter over medium heat.  I added salt and pepper.


I flattened the crust on an oiled sheet while the chicken browned.  I baked the pizza crust for ten minutes at 400 degrees before adding any toppings.


I added Frank's Red Hot Original and simmered the chicken for eight to ten minutes.


I poured the chicken mixture over the partially baked crust.


I spread the chicken and sauce evenly over the crust.


I sprinkled on grated mozzarella cheese.


I sprinkled on blue cheese too.  It was a mountain of creamy, gooey cheese!


I baked the pizza for another seven minutes at 400 degrees.


This pizza was excellent! It was toothsome and savory.


 It packs a strong flavor punch, so it's not for the faint of heart.


The blue cheese and Frank's Red Hot Sauce have a potent but delicious flavor.  The milder mozzarella and chicken tone things down a bit.


The mountain of cheese and sauce melt into this warm, gooey, and delightful mess.  Messy foods are so satisfying.  I know I have really enjoyed a meal when my hands are sticky, and I need a napkin.


This pizza was a rousing success! Yum!
