Creamy Gnocchi with Sausage and Asparagus


I'm going to Florida tomorrow.  It will be my first time in Florida.  We are going to fly into Miami and then drive to the Florida Keys. 


I am excited, but I'm surprised the date for our trip has almost arrived.  The trip just sprang up on me.  There are many things I want to see in Florida, but there just isn't enough time.  




We are only going to see two things in Miami.  I'm not even sure we will see all of the Florida Keyes.  I want to see the Everglades, but I'm worried it might not happen.  


The idea for this recipe came from a dish I ate at a restaurant called Founding Farmers.  They didn't have asparagus in their dish, but it had sausage, gnocchi, and a rich cream sauce.  I am glad I added the asparagus because it made the meal a little less heavy.



The ingredients are 1 bunch asparagus, 3 tablespoon coconut oil (or butter), 3 tablespoon all purpose flour, 1/4 teaspoon nutmeg, 1 teaspoon salt, 1 garlic clove, 1 tablespoon mustard, 1 1/2 cups milk, 1 1/2 cups munster cheese, 1 pound gnocchi, and 12 ounces chicken meatballs.  


I boiled water and cooked the gnocchi according to the package instructions.  I heating the coconut oil in a skillet.  I added flour once the oil had melted.  I cooked the flour for a few minutes until the color had darkened.  



I added the nutmeg, salt, garlic, and mustard.


I slowly added in the milk.  After each addition of milk, I stirred until there were no clumps of flour.  


It would have been wise to add the cheese at this point, but I added the asparagus and meatballs.


I added the cheese and stirred carefully until the cheese was melted.  My skillet was just barely big enough to fit all the ingredients!  I cooked the sauce for about five minutes.  I wanted the asparagus to be a little tender and the meatballs to be warm.


I added the cooked and drained gnocchi.


I stirred this magically delicious pot of creamy goodness together.  


This was a delicious, toothsome, and creamy dish.  It isn't healthy, but it will stick to your bones.  I would highly recommend you try this gnocchi recipe out.  It's comfort food at its best.


There was lots of sauce, but I didn't mind as the sauce is cheesy and delicious.  I had no problem scooping and devouring any left over cheese sauce in the bottom of the bowl!

I love gnocchi but I've never served it like this. The last time I made it with a broccoli, butter and garlic sauce.

I love the Florida Keys. Such a beautiful and relaxing place and the drive from Miami is lovely once you start down the keys.
