Southwest Vegetable Salad with Cilantro Dressing


Hello spring!  I don't know the weather you're having today, but the weather here is amazing.  You could get away with not even wearing a jacket.  Given that a little over a week ago I didn't go to work because of too much snow, this weather seems miraculous.  




This is a fairly simple salad.  I have seen similar salads online and in restaurants.  It's pretty tasty.  I was going to make my own cilantro dressing, but Trader Joe's did not have any cilantro.  They did have bags and bags of parsley.  They also had a inexpensive and healthy bottle of cilantro dressing.

The ingredients for this salad are 1 avocado, 1 lime, 4 green onions, 1 pound cherry tomatoes, 1 can  black beans, 1 red pepper, 1/2 pound frozen corn, and about 1 cup cilantro dressing.

I chopped the avocado and squeezed the lime juice over them to keep them from browning.


I rinsed the cherry tomatoes and black beans thoroughly.


I chopped the green onions and red pepper.  A green pepper would work of course, but I think the red is a little prettier.


I combined the avocado, green onions, red pepper, corn, black beans, and cherry tomatoes.


I added the cilantro dressing.


I stirred everything together and enjoyed.  This was a healthy and refreshing salad.  I love these Mexican inspired flavors.  It was colorful, and the flavors were bright.  The taste is better the second day after the dressing has had time to permeate the entire dish.  I think you would be especially pleased with this dish.

Love all these flavors together, I make a salsa that's similar --- definitely getting me in the warm weather mood!
