Banana Pancakes with Reese's Pieces


I got back from Vietnam late last night.  It was a whirlwind of a trip.  I had a wonderful time.  I don't plan relaxing trips.  I plan vacations where I see as much as I can.  My friend and I were both pretty ragged and tired by the end, but I wouldn't have had it any other way.


We visited Hanoi, Ho Chi Min City, Halong Bay, and Sa Pa.  For most of the trip it was blisteringly hot, but it rained heavily the two days we were in Sa Pa.  We did not let the rain deter us.  We bought rain jackets and explored little villages, waterfalls, and the countryside.  

We visited many museum too.  We also saw Ho Chi Min's body in Hanoi.  Their perspective was definitely unlike the history I learned in my American history classes.  I guess everyone has their own angle and version of history.  I now want to read more about Vietnam's history to have my own interpretation of events.


It is a little sad to return to my normal routine, but I am a little excited to making my own food again.  Today I went grocery shopping and made two new recipes. I made these banana pancakes the week before leaving for Vietnam.


I found the banana pancake recipe on allrecipes.com.  I added Reese's Pieces to the original recipe.


The ingredients are 1 cup all-purpose flour, 1 tablespoon white sugar, 2 teaspoons baking powder, 1/4 teaspoon salt, 1 beaten egg, 1 cup milk, 2 tablespoons vegetable oil, 2 ripe and mashed bananas, and 1/2 cup Reese's Pieces.



I combined the flour, sugar, baking powder, and salt in a bowl.  I whisked the dry ingredients together.




In another bowl, I combined the egg, milk, vegetable oil, and mashed bananas.


I whisked the wet ingredients into the dry ingredients.


I stirred in the Reese's Pieces.


For each pancake, I poured a third of a cup of batter onto a greased and hot skillet.  I flipped the pancakes when bubbled started forming in the centers of the pancakes and the edges looked drier.  I cooked the other side of each pancake for a few minutes.


I ate these pancakes with greek yogurt.  I think caramel sauce and peanut butter would have been more delicious.


These were tender and moist pancakes.  They were not as thick and fluffy as I like.


They had a pronounced banana taste


The bananas and Reese's Pieces complimented each other well.  The Reece's Pieces softened in the hot pan, but the outside remained crisp.


The edges of the pancakes were golden brown and caramelized.  Overall, they were very satisfying and hearty pancakes.
