Peanut Butter Pancakes with Chocolate Chips


I am a terrible disciplinarian.  Whenever I am around children, I have little will enforce rules.



Today I taught a class of 9 year olds in church.  It isn't something I do regularly.  I kept making suggestions to the students to sit in their seats and stop talking.  As the adult, I shouldn't suggest but direct with authority, right?


In the past, I taught English as a second language.  I was a poor disciplinarian then as well.  To discipline well, you always have to be on your game.  You have to correct any infraction consistently and immediately, no matter if it is only a minor issue.  I find it exhausting.  


If I ever have children, this could be a big problem.  My kids would be very spoiled because I'm so lazy and passive.  It would be convenient if people come into the world knowing how to behave in every circumstance. 


In Great Britain, pancakes are made without leavening and resemble crepes.  Ancient Greeks are the first recorded people to make and eat pancakes.  Greek writers in the fifth century BC referenced pancakes.  Each region of the world has their own variety.  I got this recipe from recipe girl.  




The ingredients are 1 cup all-purpose flour, 1 tablespoon granulated white sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 3/4 cup buttermilk, 1/3 cup creamy peanut butter, 1 large egg, 1 teaspoon vanilla extract, and 1/2 cup chocolate chips.


I added the flour, sugar, baking powder, baking soda, and salt into a bowl.  I whisked the dry ingredients together.



I added the peanut butter, egg, buttermilk, and vanilla into another bowl.



I whisked the wet ingredients together.


I added the dry ingredients into the wet ingredients and whisked.


Before the batter was completely mixed together, I added the chocolate chips.


I added a third of a cup of the batter onto a hot, greased pan.


Once bubbles started to form near the center, I flipped the pancake and cooked it on its other side.


Once it was done cooking, I spread jam on top of each pancake and enjoyed.


They were light, fluffy, and delectable.


I could taste the peanut butter in each bite, but it wasn't overwhelming.  Peanut butter and chocolate are one of my favorite flavor combinations.  They are perfect dessert flavors, but I now know they are a great combination for breakfast too.


The pancake batter was very thick at first.  I ended up adding a little extra milk.  The batter made thick pancakes, but the pancakes weren't dense.  They were moist but fluffy.


I ate my pancakes with jam, but sliced bananas with honey would have been wonderful toppings too.  If you wanted to be really decadent you could eat these pancakes with whipped cream and chocolate syrup.


I'll definitely make these pancakes again.  The pancakes were spot on.  They would make any morning special.

I'm also so bad at discipline! I start out good and it just goes downhill. I love peanut butter pancakes!

PB pancakes look fabulous! Fortunately I don't have to deal with the discipline issue yet! Can't say I am looking forward to that...I'm going to have to develop some strong willpower!
