Mincemeat Cookies


Happy Easter tomorrow!  When I was growing up, we would do Easter baskets on Saturday.  We would also usually go hiking in the desert on the Saturday before Easter as well.


I have fond memories of the Saturday before Easter.  My cousins, aunts, and uncles would get together to go have a picnic and take a hike. We would always have a trail mix that my aunt called bird seed.

Chocolate Cookies with Andes Creme de Menthe Baking Pieces


These cookies do not look like much, but there were tasty.  The mint pieces aren't very visible from the outside, so they look like plain chocolate cookies.  


I think that spring has finally arrived around here.  The weather has warmed up.  Flowers are blooming.  Last weekend was the cherry blossom festival.  The blossoms were in full bloom which doesn't always coincide with the festival.

Yesterday after work I went to an art museum a few blocks away from my work.  The weird thing is I never knew that it even existed. 



It just proves that you have to live someplace for a long time before you know all the ins and outs of the place.

Chai Spiced Pancakes with Chocolate Chips


Yesterday I went to a restaurant with some friends.  We asked our server if we could split the check.  I know many servers do not like doing that.  He should have refused because he has such a hard time doing it.


He didn't do it correctly two times.  On the third attempt, we just asked to have him split it equally five ways, but that didn't work out either.  I think he was new to the job, and needed some help.

Roasted Carrots with Cardamom Butter


This is a healthy change from what I usually post about on my blog.  It is good to switch it up every once in a while.


I don't know if these are the healthiest carrots because the recipe does call for butter and oil.  All things in moderation, right?

Chai Spiced Chocolate Chip Cookies


Another day, another cookie recipe! I feel like Chai spiced things were the rage a couple of years ago.  I think I have eaten Chai spiced cupcakes and Chai spiced blondies.  


I am a big fan of chocolate chips cookies, so why not make them a little fancier with spices? They were tasty cookies, so it worked out.

Mincemeat Bar Cookie


I seem to have a problem posting recipes as much as I did in the past.  In the past, I would try and post a couple times a week.  That is a pretty intense schedule.  Now I post two or three times a month.  I don't have a problem with that, but I now have a backlog of food pictures.


I may need to start making old recipes again so I don't feel compelled to take pictures.  I took a break from making Thai food because I had made so many Thai curries.  I guess I need to pull out a few of my favorites and make them again.

Moroccan Beef Stew


It snowed today.  It is supposed to get up to the 50s tomorrow so it probably will not last long.  Many people worked from home because of the snow.  I went into work, and it was so quiet.  I had the place to myself.


In other exciting news, I saw the musical Wicked last weekend for the first time in my life.  I remember that a little over ten years ago it was so popular.

Ginger Cookies Dipped in White Chocolate


I made this cookies a during the holidays.  It has taken a while for me to post about them.  They are really more appropriate for Christmas, but I am sure they would still be delicious for Valentine's Day.


What makes these really special are the cool star shaped sprinkles.  I still have at least half a bottle of these sprinkles.  I'll have to think of something special to make that would be improved with star shaped sprinkles.

Chocolate Pancakes with Reese's Pieces and Peanut Butter Cups


We have been having peculiar weather where I live.  Last week it was very cold and snowy.  Today it reached 70 degrees.  In just one week the daily high temperature rose at least 40 degrees.


It was so warm yesterday and today that I rode my bike to work.  It has been a while since I could comfortably ride my bike to work.  Next week the temperature is going to get back down to the 30s and 40s, but this Spring time weather was been a wonderful break.

Slow Cooker Spanish Beef Stew


I don't know if this it authentic to any region of Spain, but it was tasty and hearty.


It is made in a slow cooker so this dish is also very convenient.  I just put everything in the crock pot and let it do its thing for a few hours.

Caramel Brownies


It has been snowing quite heavily for about 24 hours where I live.  I have helped shovel the drive, but have been inside for most of the day.  


Days like today are the perfect type of day to bake and eat decadent baked goods like these brownies.  It is a perfect day to snuggle up with a good book and eat a brownie.

Peppermint Chocolate Pancakes with Chocolate Chips


I haven't posted for a while.  I indented to over the Christmas holidays, but other things got in the way.  Since returning back from the holidays I haven't been busy, just lazy.


Yesterday I saw Miss Saigon for the first time.  I had heard about the musical, but I was unfamiliar with the story line.  I also had never heard any of the music before yesterday.

Chocolate Chip Cookies with Caramel


Strangely enough, I made these cookies for Thanksgiving.  I did not have traditional thanksgiving food.  We ate fettuccini Alfredo and these chocolate chips cookies.


I did not want to go through all the work of preparing a traditional Thanksgiving meal, and I am glad my friends did not want to either.

Peanut Butter Cookie for one with Reese's baking cups and Reese's Pieces


It's December! I have already had my first holiday party and have another one tomorrow. I'm excited for Christmas, even if it seems like it was just Christmas.


My parents have already given me my Christmas present, although I expect I will still have something to open on Christmas morning.  I was given an electric keyboard.  They mailed it directly to me.

Pumpkin Pancakes with Chocolate Chips


It's the Christmas season! What better way to welcome in the Holidays with pumpkin pancakes?  


I feel like pumpkin pancakes are appropriate for Thanksgiving and Christmas.  The pumpkin makes perfect for Thanksgiving, and the cinnamon, ginger, and allspice make them a good fit for Christmas as well.
