Banana Strawberry Pancakes


I needed to go to Target today to pick up some things.  My apartment wasn't on the way, so I left directly from work without eating dinner.


By the time I got off the bus near the shopping center, I was hungry.  There is a Cuban restaurant in that part of town I have wanted to visit, so I went and ate solo.


I try to arrange my free time doing fun activities or hanging out with friends.  It's nice to be with people and enjoy their company. 


It's also nice to spend time alone too.  I ate my dinner slowly while watching people walk by the restaurant's front window, did my shopping, and walked home instead of taking the bus.  It was delightful.  I need time to let myself think and process things.


This is obviously another pancake recipe.  Eventually all my creative juices will run dry, and I'll stop posting pancake recipes.  The base recipe is a banana pancake recipe I have used many times from allrecipes.com.  I used less milk, omitted the sugar, and added strawberry jam.



The ingredients are 3/4 cup milk, 1/2 cup strawberry jam, 1 cup all-purpose flour, 2 teaspoons baking powder, 1/4 teaspoon salt, 1 egg, 2 tablespoons vegetable oil, and 2 ripe bananas.


I combined the flour, baking powder, and salt.



I mashed the bananas.  I mixed the egg, milk, vegetable oil, and jam into the banana puree. 



I poured the wet ingredients into the dry mixture and whisked until there were no lumps of flour.  There were lumps of sweetened strawberry.


I melted a little butter in a hot skillet.  I poured a fourth of a cup of pancake batter into the pan and cooked each pancake over medium-high heat until little bubbles formed in the center of the pancake.  I flipped the pancakes and let them cook for another few minutes of the other side.


It is safe to say that pancakes are one of my favorite breakfasts.  I would prefer a soft, raisin studded cinnamon roll, but my cloths wouldn't fit if I ate that every morning.  


Though not as sweet as a cinnamon roll, these pancakes are just as tender.  The texture is wonderful.


The strawberry flavor was too subtle for my taste.  If I ate these with a sweet sauce like syrup or honey, the strawberry taste would have been lost completely.


 Regardless, I thoroughly enjoyed these pillowy pancakes!
